Cabbage is October’s Pick of the Month

The humble, inexpensive cabbage is a nutritional powerhouse.   It  contains  various nutrients that  benefit the digestive system, ward of colds, decrease inflammation and may even help prevent certain cancers.

There are many varieties of cabbage. In addition to the familiar smooth green and red heads, savoyed varieties,   Asian varieties such as bok choi, and the elongated napa cabbage are also commonly available.

Recipe for Confetti Slaw

Small head of Green Cabbage, Shredded

Half head of Red Cabbage, Shredded

2-3 carrots, shredded

½ cup dried cranberries

½ cup golden raisins

½ cup sunflower seeds (optional)

Slaw Dressing:

1 cup plain, unflavored yogurt

¼ cup honey

3 tablespoons apple cider vinegar

1 tablespoon poppy seeds

Dash of  sea salt

Dash of freshly ground pepper

Mix together the prepared cabbage, carrots, cranberries, raisins and sunflower seeds in a large bowl.   In a small bowl, whisk together the dressing ingredients.   Dressing ingredients can be adjusted to taste.   When dressing is whisked into a smooth mixture,  fold into the other ingredients and  mix gently with a wooden spoon until  cabbage, etc. is coated.   Cover and refrigerate until use.  Slaw improves if held in the refrigerator several hours before serving.
