
Tasting the “Pick of the Month”

Spinach in a smoothie? For breakfast? Well the students at Early Bird Breakfast Club on Thursday, March 14, voted an overwhelming “yes”! As part of our “pick of the month” emphasis (it’s greens this month), and as an early St. Patty’s celebration, students were given an opportunity to sample green smoothies.

A total of 65 participated, which is a good percentage of the breakfast crowd. Several liked it so well they came back for second and third “samples”. We will probably be looking into getting a good blender or two so we can add this to breakfast offerings once in awhile. It’s a great way to add greens to your diet!

Recipe to make a blender full of Spring Spinach Smoothies
1 cup ice cubes
2 cups (handfuls) organic spinach
½ banana
1 cup fruit of your choice –we did some with strawberries, which tastes good, but makes a less pretty green; and some with pineapple (prettier)
½ cup plain yogurt
½ cup milk
2-3 tablespoons honey
Blend the ice, the milk, and the spinach first until smooth. Add other ingredients one at a time and blend until smooth.
